With a name meaning feather, Pluma is a plume-shaped cut popular in Spain. In the US, it's sometimes known as the pork flank steak, but it actually comes from the shoulder-neck area rather than the belly. In its raw state it may not be much to look at - it's a rather messy-looking cut flecked with chunks of white fat - but this is Iberico pork, a breed inclined to store greater fat reserves than others, and that fat is what gives the meat its acclaimed succulence and exquisite flavor.
